300g Extra Firm Tofu
30g Chickpea Flour (approx. 1/4 cup)
2 tbsp Nutritional Yeast
1 cup Fresh Spinach
1 small Yellow Onion
2 cloves Garlic
1 tsp Extra Virgin Olive Oil
2 tbsp Fresh Mixed Herbs (Parsley & Dill)
Salt and Pepper to taste
PREPARATION
Press the tofu gently to remove excess water, then crumble it into a bowl.
In a small bowl, whisk together the chickpea flour with a few tablespoons of water to create a smooth slurry. This will help bind the scramble.
Heat the olive oil in a non-stick skillet over medium heat. Sauté the chopped onion and minced garlic until softened and fragrant, about 2-3 minutes.
Add the crumbled tofu to the skillet and stir it in with the onions and garlic.
Pour the chickpea slurry over the tofu and stir thoroughly to combine, allowing it to coat the tofu evenly.
Sprinkle in the nutritional yeast, and add salt and pepper to taste. Continue cooking for about 3-4 minutes, letting the flavors meld.
Gently fold in the fresh spinach and herbs, cooking just until the spinach wilts, about 1 minute.
