INGREDIENTS
6 oz Shrimp (raw)
1 tsp Olive Oil (for shrimp)
1 Tbsp Lemon Juice
1 Tbsp Fresh Parsley, chopped
1 cup Cauliflower Florets
1 Garlic Clove
1/4 cup Low-Fat Milk
1 Tbsp Olive Oil (for mash)
Salt and Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt and pepper.
In a bowl, toss the shrimp with 1 teaspoon olive oil, lemon juice, and chopped parsley. Set aside to marinate for 5 minutes.
Heat a non-stick skillet over medium-high heat and add the marinated shrimp. Sear the shrimp for about 2 minutes per side until they turn pink and opaque. Remove from heat.
Meanwhile, steam the cauliflower florets until very tender, about 8-10 minutes. Add the garlic clove during the last 2 minutes of steaming for a mellow roasted flavor.
Transfer the steamed cauliflower and garlic to a blender or food processor, add 1/4 cup low-fat milk and 1 tablespoon olive oil, then blend until smooth and creamy. Season with salt and pepper to taste.
Plate a generous scoop of creamy garlic cauliflower mash and top with the citrus-herb shrimp. Garnish with extra parsley or a squeeze of lemon if desired.
