PREPARATION
Wash and dice the golden potato into small, even cubes. Dice the red bell pepper as well.
Heat a non-stick skillet over medium heat and add the olive oil.
Add the diced potato to the skillet and sauté until they begin to soften and develop a light golden crust, about 8-10 minutes.
