Enjoy a delicious twist on the classic quesadilla by using crispy baked BBQ chicken combined with melty reduced-fat cheddar and a whole wheat tortilla. This dish offers a perfect balance of smoky BBQ flavor with a satisfying crunch in every bite – ideal for a wholesome dinner that doesn’t compromise on taste or nutrition.
INGREDIENTS
4 ounces Chicken Breast
1 whole wheat tortilla (approx. 50g)
1.5 tablespoons BBQ Sauce
1/4 cup shredded reduced-fat cheddar cheese (28g)
1/2 medium red bell pepper
1/4 small red onion
PREPARATION
Preheat your oven to 400°F (204°C).
Slice the chicken breast into thin strips and toss them with BBQ sauce ensuring all pieces are well coated.
Place the BBQ chicken on a baking tray lined with parchment paper and bake for 15-20 minutes until the edges are crispy and the chicken is fully cooked.
Meanwhile, thinly slice the red bell pepper and red onion.
Once the chicken is ready, assemble the quesadilla by placing the whole wheat tortilla on a flat surface, spreading the baked BBQ chicken over half of the tortilla, and evenly sprinkling the reduced-fat cheddar cheese on top. Add the sliced bell pepper and onion for extra crunch and flavor.
Fold the tortilla over to create a half-moon and transfer it to a non-stick skillet over medium heat.
Cook for 2-3 minutes on each side or until the tortilla is crisp and the cheese has melted.
Remove from the skillet, cut into wedges, and serve warm.
