1 medium Zucchini
1 tbsp Olive Oil
1/4 Lemon (juice)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the zucchini.
Slice the zucchini into rounds or half-moons. Toss them with half of the olive oil, salt, and pepper, and spread them onto a baking sheet.
Roast the zucchini in the oven for about 15-20 minutes until tender and slightly browned, stirring halfway through.
While the zucchini is roasting, pat the salmon fillet dry with a paper towel. Season both sides with salt and pepper.
In a skillet over medium-high heat, add the remaining olive oil.
Mince the garlic and add it to the skillet, cooking for about 30 seconds until fragrant.
Place the salmon fillet skin-side down (if applicable) in the skillet and sear for about 3-4 minutes. Carefully flip the salmon and cook for an additional 3-4 minutes until cooked through.
