PREPARATION
Preheat your oven to 425°F (220°C).
Press the tofu gently between paper towels to remove excess moisture, then cut it into 1/2-inch cubes.
Toss the tofu with a little olive oil, salt, and pepper. Spread the cubes on a lined baking sheet.
Cube the potato into 1/2-inch pieces and toss with a drizzle of olive oil, salt, and pepper. Place on another section of the baking sheet or a separate one.
Roast the tofu and potatoes in the oven. Check tofu at around 20 minutes until edges are crispy and potatoes are tender and golden, tossing halfway through.
While roasting, trim the green beans and steam or blanch them for about 4-5 minutes until they are tender-crisp.
