Creamy Garlic Chicken Spinach Pasta
Enjoy a comforting bowl of creamy garlic chicken spinach pasta that balances tender, juicy chicken with whole wheat pasta and fresh spinach in a light, garlicky cream sauce. This dish is both hearty and nutritious, making it perfect for any meal of the day.
INGREDIENTS
4 oz Chicken Breast
1 cup Whole Wheat Pasta (cooked)
1 cup Fresh Spinach
1 tsp Olive Oil
2 cloves Garlic
2 tbsp Low-Fat Cream Cheese
0.5 tsp Italian Seasoning
Salt and Pepper, to taste
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat pasta according to the package instructions until al dente. Drain and set aside.
While the pasta cooks, pat the chicken breast dry and season with salt, pepper, and Italian seasoning.
Heat the olive oil in a skillet over medium heat. Add the chicken breast and cook for about 5-6 minutes on each side until fully cooked and lightly browned. Remove the chicken from the skillet and slice into strips.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
Reduce the heat to low and stir in the low-fat cream cheese. Mix until a creamy sauce forms, then add the cooked pasta and chicken strips back into the skillet.
Toss everything together until well combined and heated through. Adjust salt and pepper to taste before serving.
