Crispy Sesame Tofu Stir-Fry with Fresh Vegetables
Enjoy a vibrant, crunchy stir-fry featuring crispy tofu, protein-packed edamame, and a rainbow of fresh vegetables tossed in a light sesame-soy drizzle. This balanced dish offers a satisfying blend of textures and flavors with a delightful nutty aroma from toasted sesame seeds.
INGREDIENTS
200g Firm Tofu
0.5 cup Shelled Edamame
1 cup Broccoli
1 medium Red Bell Pepper
1 small Carrot
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
PREPARATION
Drain the tofu and press it for 10-15 minutes to remove excess moisture. Once pressed, cut the tofu into 1-inch cubes.
In a bowl, gently toss tofu cubes with a little salt, and the low-sodium soy sauce. Optionally, add a sprinkle of pepper for extra flavor.
Heat sesame oil in a non-stick skillet or wok over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy, about 6-8 minutes.
While the tofu is cooking, prepare the vegetables: cut broccoli into florets, slice the red bell pepper into strips, and julienne the carrot.
In a separate pan or after tofu is done, add the broccoli, red bell pepper, and carrot. Stir-fry the vegetables for 3-4 minutes until crisp-tender.
Add the shelled edamame to the vegetables and toss to combine.
Return the crispy tofu to the pan with the vegetables. Drizzle with additional low-sodium soy sauce if desired.
Sprinkle with sesame seeds and give a final gentle toss to mix all the ingredients evenly.
Serve warm and enjoy this balanced, flavorful stir-fry.
