INGREDIENTS
4 oz Chicken Breast
1 cup cooked Whole Wheat Pasta
1 cup Fresh Basil Leaves
1 clove Garlic
1 tsp Extra Virgin Olive Oil (for searing)
1 tsp Extra Virgin Olive Oil (for pesto)
1 tsp Lemon Juice
1 tbsp grated Parmesan Cheese
Salt and Pepper to taste
PREPARATION
Prepare the pesto by combining fresh basil leaves, garlic, lemon juice, 1 tsp extra virgin olive oil, and grated Parmesan cheese in a blender or food processor. Blend until smooth and set aside.
Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
Season the chicken breast with salt and pepper. Heat 1 tsp extra virgin olive oil in a skillet over medium-high heat.
Pan-sear the chicken breast for about 5-6 minutes per side or until fully cooked and golden brown on the outside. Once done, let it rest for a couple of minutes before slicing.
Toss the cooked pasta with the freshly prepared pesto until well coated.
Plate the pesto pasta and top with sliced pan-seared chicken. Garnish with extra fresh basil if desired and serve immediately.
