400g Extra-Firm Tofu
1/2 cup cooked Brown Rice (approx. 100g)
1 bunch Asparagus (approx. 134g)
1 tbsp Olive Oil
1 tbsp Cornstarch
1 tsp Garlic Powder
Salt to taste
Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu to remove excess moisture. Once pressed, cut the tofu into 1-inch cubes.
In a bowl, gently toss the tofu cubes with cornstarch, garlic powder, salt, and black pepper until evenly coated.
Drizzle 1 tablespoon of olive oil over the tofu and toss to ensure each piece is lightly coated.
Arrange the tofu on half of the prepared baking sheet and place in the oven. Bake for 25-30 minutes, flipping halfway through, until tofu is golden and crispy.
While the tofu bakes, trim the woody ends from the asparagus and place on another baking sheet. Drizzle lightly with olive oil, sprinkle a pinch of salt and pepper.
Roast the asparagus in the oven for about 12-15 minutes, until tender and slightly charred.
Prepare 1/2 cup of cooked brown rice according to package instructions.
