INGREDIENTS
6 oz Chicken Breast (170g)
1 small Red Potato (100g)
1 cup Green Beans (125g)
1 tbsp Olive Oil (14g)
1 clove Garlic
2 tbsp Fresh Herbs (Rosemary, Thyme, Parsley) chopped
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C).
Pat the chicken breast dry and season with salt, pepper, and half of the chopped fresh herbs.
Cube the red potato into small, even pieces and toss with olive oil, minced garlic, salt, pepper, and remaining herbs.
Place the seasoned chicken breast on a baking sheet lined with parchment paper and arrange the potato cubes around it.
Roast in the oven for 20 minutes, then add the green beans to the baking sheet, tossing them lightly with a little extra olive oil, salt, and pepper if desired.
Continue roasting for an additional 10-15 minutes until the chicken is fully cooked (internal temperature reaches 165°F), potatoes are crispy, and green beans are tender.
Let the chicken rest for 5 minutes before slicing. Serve the sliced chicken alongside the roasted vegetables.
