7 oz Salmon Fillet
1 cup Asparagus (approx. 134g)
1 cup Cauliflower (approx. 107g)
2 tsp Olive Oil
1 Garlic Clove
1 tbsp Unsweetened Almond Milk
Salt & Pepper to taste
PREPARATION
Pat dry the salmon fillet and season with salt and pepper on both sides.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until golden. Flip the salmon and cook for another 3-4 minutes until just cooked through.
While the salmon cooks, trim the woody ends from the asparagus and steam them in a steaming basket over simmering water for about 4-5 minutes until tender yet crisp.
In a small pot, combine the cauliflower florets with a clove of minced garlic and a splash of unsweetened almond milk. Bring to a simmer and cook until the cauliflower is very tender (around 8 minutes).
Transfer the cooked cauliflower and garlic to a blender or use an immersion blender. Add the remaining teaspoon of olive oil and blend until smooth. Season with salt and pepper to taste.
