INGREDIENTS
1 serving Sweet Potato Gnocchi (120g)
2 links Lean Turkey Sausage (85g total)
2 cups Mixed Greens (Spinach and Kale, 60g)
1 teaspoon Olive Oil (5g)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Bring a pot of lightly salted water to a simmer. Add the sweet potato gnocchi and cook according to package instructions until they float to the top, then drain and set aside.
While the gnocchi cooks, heat half the olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
Add the lean turkey sausage links to the skillet and cook, turning occasionally, until browned and heated through.
In a separate pan, heat the remaining olive oil and add the mixed greens. Sauté for 2-3 minutes until they begin to wilt, seasoning with a pinch of salt and pepper.
Combine the cooked gnocchi with the pan-seared turkey sausage. If desired, toss in the sautéed greens or serve them on the side.
Plate the dish and finish with an extra light drizzle of olive oil and a dash of freshly ground black pepper. Serve warm.
