PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then slice into 1/4-inch thick pieces.
Preheat your grill or grill pan over medium-high heat.
Brush the tofu slices and vegetable pieces lightly with olive oil and season with salt and pepper.
Grill the tofu slices for about 3-4 minutes on each side until you see grill marks. Grill the eggplant, zucchini, and red bell pepper slices until tender and nicely charred, about 2-3 minutes per side.
