INGREDIENTS
300 grams Extra-firm Tofu
0.5 cup Shelled Edamame (~75g)
1 cup chopped Broccoli (91g)
1 medium Red Bell Pepper (120g)
1 medium Carrot (61g)
0.5 cup Sugar Snap Peas (~50g)
2 cloves Garlic
1 tbsp Fresh Ginger, minced
0.5 tbsp Cornstarch
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Seeds
PREPARATION
Press the tofu for at least 20 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, toss the tofu with cornstarch until evenly coated.
Heat a non-stick pan over medium-high heat and add the sesame oil. Sauté the tofu cubes until they are golden and crispy on all sides. Remove tofu from the pan and set aside.
In the same pan, add minced garlic and ginger, stir for about 30 seconds until fragrant.
Add the chopped broccoli, red bell pepper strips, sliced carrot, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender but still crisp.
Stir in the shelled edamame and return the crispy tofu to the pan.
Drizzle with low-sodium soy sauce and sprinkle sesame seeds over the mixture. Toss everything gently to combine and heat through.
Serve your vibrant stir-fry warm and enjoy the mix of textures and flavors.
