INGREDIENTS
7 oz Salmon Fillet
0.5 tbsp Extra Virgin Olive Oil
1 cup Fresh Green Beans
2 cups Cauliflower florets
0.25 cup Plain Nonfat Greek Yogurt
2 Garlic Cloves
Salt and Black Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat 0.5 tablespoon of extra virgin olive oil in a skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for 3-4 minutes until a golden crust forms. Flip the salmon and cook for another 3-4 minutes until desired doneness is reached.
While the salmon cooks, steam the green beans for about 4-5 minutes until they are crisp-tender. In the last minute of steaming, add minced garlic for a burst of flavor.
Separately, steam the cauliflower florets until soft, approximately 8-10 minutes. Transfer the cooked cauliflower to a blender or food processor, add the plain Greek yogurt, one crushed garlic clove, a pinch of salt and pepper, and blend until smooth to create a creamy mash.
Plate the seared salmon alongside the garlic green beans and a generous serving of cauliflower mash. Garnish with an extra sprinkle of black pepper if desired and serve warm.
