INGREDIENTS
360g Extra Firm Tofu
150g Yukon Gold Potato
100g Green Beans
1 tsp Olive Oil
1 Garlic Clove
1 tbsp Fresh Mixed Herbs
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 20 minutes to remove excess water. Slice into 1/2-inch thick steaks.
Peel and chop the potato into chunks. Boil in salted water until tender, about 15 minutes. Drain.
In a small pan, heat half the olive oil over medium heat. Sauté minced garlic until fragrant, then add the boiled potatoes and fresh herbs. Mash until smooth and season with salt and pepper. Set aside keeping it warm.
Pat the tofu steaks dry with a paper towel. Season both sides with salt, pepper, and chopped herbs.
In a non-stick skillet, heat the remaining olive oil over medium-high heat. Sear the tofu steaks for about 3-4 minutes per side until golden and crispy on the edges.
Meanwhile, blanch the green beans in boiling water for 3-4 minutes until tender-crisp, then drain and season with a pinch of salt.
Plate the seared tofu steaks alongside a generous scoop of garlic mashed potatoes and a serving of green beans. Serve warm and enjoy!
