INGREDIENTS
1 medium head Cauliflower (~600g)
1 block Extra-Firm Tofu (200g)
1/3 cup Chickpea Flour (~40g)
1/4 cup Buffalo Sauce (~60g)
2 tsp Olive Oil
1/2 cup Non-Fat Greek Yogurt
2 tbsp Nutritional Yeast
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Paprika
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the cauliflower into bite-sized florets and drain the extra-firm tofu; press it lightly and cut into similar bite-sized cubes.
In a large bowl, whisk together chickpea flour, garlic powder, onion powder, paprika, salt, and pepper. Add olive oil and a splash of water to create a light batter.
Toss the cauliflower florets and tofu cubes in the batter until evenly coated.
Spread the coated cauliflower and tofu on the baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, flipping halfway, until the bites are golden and crispy.
In a separate small bowl, combine the buffalo sauce with nutritional yeast.
Once roasted, toss the hot cauliflower and tofu bites in the buffalo mixture until well coated.
Serve immediately with a side of non-fat Greek yogurt for dipping if desired.
