250g Extra-Firm Tofu
100g Shelled Edamame
1 medium Red Bell Pepper
1 cup Broccoli Florets
1 medium Carrot
1/4 Red Onion
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 clove Garlic
1 tsp Fresh Ginger
PREPARATION
Press and drain the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a bowl, gently toss the tofu cubes with a little low-sodium soy sauce and half of the sesame oil. Let marinate for 10 minutes.
While marinating, prepare the vegetables: julienne the red bell pepper and carrot, and cut broccoli into small florets. Slice the red onion thinly. Mince the garlic and ginger.
Heat the remaining sesame oil in a non-stick skillet or wok over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy, about 5-7 minutes. Remove tofu from the skillet and set aside.
In the same skillet, add the garlic, ginger, and red onion. Sauté for about 1 minute until fragrant.
Add the bell pepper, broccoli, and carrot to the pan. Stir-fry the vegetables for 3-4 minutes until tender-crisp.
Return the crispy tofu to the skillet along with the shelled edamame. Drizzle with the remaining soy sauce and rice vinegar, stirring gently to combine all flavors.
Cook for an additional 1-2 minutes to heat through and allow the flavors to meld.
Transfer the mixture to a serving dish and sprinkle toasted sesame seeds on top. Serve immediately.
