Enjoy a hearty and savory hash combining lean ground beef with tender roasted sweet potato, vibrant red bell pepper, and a perfectly cooked egg on top. This dish delivers a satisfying balance of rich flavors and textures, making it a versatile choice for breakfast, lunch, or dinner.
INGREDIENTS
5 oz Lean Ground Beef (93% lean)
1 small Sweet Potato
1 large Egg
1/2 Red Bell Pepper
1/4 Yellow Onion
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Peel (if desired) and dice the sweet potato into small cubes. Toss the cubes lightly with a teaspoon of olive oil, salt, and pepper, then spread them on a baking sheet.
Roast the sweet potato in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
While the sweet potato is roasting, dice the red bell pepper and finely chop the quarter onion.
In a medium skillet over medium heat, add the remaining olive oil. Sauté the chopped onion and red bell pepper for about 3-4 minutes until they soften.
Add the ground beef to the skillet. Break it apart and cook until browned and fully cooked through, seasoning with salt and pepper.
Once the beef is nearly done, create a small space in the skillet and crack the egg into it. Allow the egg to cook to your preferred doneness, gently mixing if desired.
Combine the roasted sweet potato with the beef and vegetable mixture in the skillet. Stir to evenly distribute all the flavors.
Plate the hash and enjoy warm as a hearty breakfast, lunch, or dinner.
