INGREDIENTS
6 oz Salmon Fillet
1/2 medium Sweet Potato
1 cup Green Beans
1 garlic clove
1.5 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat.
Add the salmon fillet, skin-side down if applicable, and sear for about 3-4 minutes per side or until just cooked through. Remove from the pan and let rest.
Meanwhile, peel and cube the sweet potato. Boil in water until tender, about 10-12 minutes, then drain.
Mash the sweet potato with a fork, adding a pinch of salt and pepper to taste.
In another pan, heat the remaining 0.5 tsp olive oil over medium heat. Add the minced garlic and sauté for 30 seconds.
Add the green beans and sauté until crisp-tender, about 4-5 minutes. Season with salt and pepper.
Plate the salmon alongside a generous scoop of sweet potato mash and a serving of garlic green beans. Serve warm.
