INGREDIENTS
1 medium Bell Pepper
5 oz Lean Ground Turkey (93% lean)
1/3 cup Reduced-Fat Cheddar Cheese, shredded
1 small Onion, diced
1 clove Garlic, minced
1/2 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper and remove the seeds and membranes. If desired, lightly brush the outside with olive oil for extra crispiness.
In a skillet over medium heat, add olive oil and sauté the diced onion until softened, about 3-4 minutes.
Add the minced garlic and continue to cook for 1 minute until fragrant.
Add the lean ground turkey to the skillet. Season with salt and pepper, and cook until the turkey is browned and cooked through, breaking it up as it cooks.
Remove the skillet from heat and stir in the shredded reduced-fat cheddar cheese until just melted into the turkey mixture.
Stuff the prepared bell pepper with the turkey mixture, pressing gently to fill the cavity completely.
Place the stuffed bell pepper in an oven-safe dish and bake for 15-20 minutes. If you prefer a crispier top, broil for the last 2-3 minutes, keeping a close eye to avoid burning.
Remove from the oven and let cool for a few minutes before serving.
