PREPARATION
If using raw shrimp, peel and devein them. Optionally, lightly poach the shrimp in boiling water for 1-2 minutes until they turn pink, then drain and cool. Alternatively, if you prefer truly raw ceviche, ensure your shrimp is of the highest quality and very fresh.
Dice the shrimp into bite-sized pieces and place them in a large bowl.
