INGREDIENTS
200g Extra Firm Tofu
1/2 cup cooked Brown Rice (approx. 100g)
1/2 cup sliced Red Bell Pepper (approx. 75g)
1/2 cup chopped Broccoli (approx. 45g)
1 tbsp Crushed Peanuts (approx. 18g)
1 tbsp Peanut Butter (approx. 16g)
1 tsp Low-Sodium Soy Sauce (approx. 5g)
PREPARATION
Press the tofu to remove excess moisture and cut it into cubes.
Cook brown rice according to package instructions if not pre-cooked.
In a bowl, whisk together peanut butter and low-sodium soy sauce with a splash of water to create a smooth sauce.
Lightly toss the tofu cubes in a small amount of cornstarch if desired for extra crispiness.
Heat a non-stick skillet over medium-high heat and add a small amount of oil. Sauté tofu until it becomes golden and crispy on all sides, then remove from the pan.
In the same skillet, add red bell pepper and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
Return the tofu to the pan and pour over the peanut sauce, mixing well to coat all pieces.
Add crushed peanuts and stir to combine.
Serve the crispy peanut tofu and vegetables over a bed of brown rice.
