INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
0.5 tbsp Olive Oil
1 tbsp Lemon Juice
1 clove Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F for roasting the asparagus.
Rinse and pat dry the salmon fillet. Season both sides lightly with salt and black pepper.
Carefully heat a non-stick skillet over medium-high heat. Add the 0.5 tablespoon of olive oil and allow it to shimmer.
Place the salmon skin-side down (if skin is present) in the skillet. Sear for about 3-4 minutes until a crispy crust forms.
Gently flip the salmon and cook for another 3 minutes or until the fish is just cooked through. Remove the salmon from the skillet and set aside.
Trim the woody ends off the asparagus. On a baking sheet, toss the asparagus with a drizzle of olive oil, minced garlic, lemon juice, salt, and black pepper.
Roast the asparagus in the preheated oven for about 8-10 minutes until tender yet still crisp.
Plate the salmon alongside the roasted asparagus. Optionally drizzle any remaining pan juices over the salmon for extra flavor.
