1 cup Spinach
1 stalk Celery, sliced
1 tsp Olive Oil
2 cups Vegetable Broth
PREPARATION
Rinse the lentils thoroughly and if using dry lentils, cook them until tender. If already cooked, measure out one cup.
Heat the olive oil in a large pot over medium heat. Sauté the chopped onion, garlic, and celery until softened, about 3-4 minutes.
Add diced carrot and continue to sauté for another 2 minutes.
