PREPARATION
Press the firm tofu to remove excess water, then cut it into cubes.
Cook the rice noodles according to package instructions. Drain and set aside.
In a large pan, heat a drizzle of oil over medium-high heat. Add the tofu cubes and cook until all sides are golden and crispy. Remove tofu and set aside.
