INGREDIENTS
4 oz Lean Roast Beef
1 tsp Olive Oil (for Beef)
1 cup Brussels Sprouts, halved
1 tsp Olive Oil (for Brussels Sprouts)
1/2 cup Sweet Potato Mash
1 clove Garlic, minced
1 tsp Fresh Rosemary, chopped
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Pat the lean roast beef dry and rub with 1 tsp olive oil, minced garlic, chopped rosemary, salt, and pepper.
Place the beef on a baking sheet and roast in the oven for about 15-18 minutes for medium doneness, or adjust as needed for your preferred level.
While the beef is roasting, toss the halved Brussels sprouts with 1 tsp olive oil, salt, and pepper. Spread them out on another baking sheet and roast in the oven for about 15 minutes until crispy on the edges.
Meanwhile, prepare the sweet potato mash by warming the cooked, baked sweet potato and mashing it until smooth; season with a pinch of salt and pepper.
Once everything is cooked, slice the beef thinly. Plate the roasted beef alongside a serving of crispy Brussels sprouts and a scoop of sweet potato mash.
Garnish with a little extra fresh rosemary if desired and serve immediately.
