60g Chorizo Sausage
2 large Eggs
50g Fresh Tomato
50g Plain Non-Fat Greek Yogurt

PREPARATION
Preheat your oven to 400°F (200°C).
Dice the white potato into small cubes. Spread the cubes on a baking sheet and season lightly with salt and pepper.
Roast the potatoes for about 20-25 minutes until they start to get crispy, stirring halfway to ensure even cooking.
While the potatoes roast, slice the chorizo into rounds or half-moons. After the potatoes have roasted for around 15 minutes, sprinkle the chorizo pieces over the potatoes and return to the oven for the remaining time.
When the potatoes are almost done, scatter chopped fresh tomato over the mixture. Create two small wells in the hash and carefully crack an egg into each well.
