3 Large Eggs

1/2 tablespoon Olive Oil

PREPARATION
Preheat your oven to 425°F.
Dice the medium potato into 1/2-inch cubes. Toss the potato cubes with a drizzle of olive oil, and season with salt and pepper.
Spread the potatoes evenly on a baking sheet and roast for about 20-25 minutes, stirring halfway through, until tender and slightly crispy.
