Herb-Roasted Salmon with Garlic Sautéed Spinach and Brown Rice
Enjoy a delicate dinner featuring a modest herb-roasted salmon paired with garlic-infused sautéed spinach and a hearty serving of brown rice, finished with a rich olive oil drizzle for a perfect balance of flavors and textures.
INGREDIENTS
1.5 ounces Salmon Fillet
1 cup cooked Brown Rice
1 cup raw Spinach
1 tbsp Olive Oil for sautéing
1 tbsp Olive Oil for drizzling
1 clove Garlic, minced
0.5 tsp Mixed Fresh Herbs
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Place the salmon fillet on a baking sheet and drizzle with 1 tablespoon olive oil. Sprinkle with salt, pepper, and mixed fresh herbs.
Roast the salmon in the oven for about 10-12 minutes until it is just cooked through and has a light golden crust.
While the salmon is roasting, rinse the spinach and set aside. In a skillet, heat 1 tablespoon olive oil over medium heat.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Add the spinach and cook for 2-3 minutes until wilted; season lightly with salt and pepper.
Prepare the brown rice if not already cooked. If reheating, warm it gently on the stove or in a microwave.
Plate the dish by placing 1 cup of brown rice on the plate, topping it with the garlic sautéed spinach, and finally arranging the herb-roasted salmon on top.
Drizzle a little extra olive oil if desired and serve immediately.
