Enjoy a bright and refreshing dinner featuring a flaky lemon-herb roasted salmon paired with crispy Brussels sprouts. The salmon is delicately seasoned with zesty lemon, garlic, and fresh thyme, while the Brussels sprouts add a satisfying crunch and natural sweetness, making this a balanced, nutrient-packed meal.
INGREDIENTS
5 oz Salmon Fillet
1 cup Brussels Sprouts
1 tsp Olive Oil
1/2 Lemon (juiced and zested)
1 clove Garlic, minced
1 tsp Fresh Thyme
Salt, to taste
Black Pepper, to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the Brussels sprouts and cut them in half. Toss them in a bowl with olive oil, a pinch of salt, and black pepper.
Place the Brussels sprouts on the baking sheet and roast in the oven for about 20 minutes, or until crispy and golden, stirring halfway through.
While the Brussels sprouts roast, prepare the salmon. In a small bowl, combine the juice and zest of 1/2 lemon, minced garlic, fresh thyme, salt, and black pepper.
Place the salmon fillet on a separate lined baking tray. Brush the lemon-herb mixture generously over the salmon.
Once the Brussels sprouts have roasted for about 10 minutes, place the salmon in the oven. Continue roasting both for an additional 12-15 minutes, until the salmon flakes easily with a fork.
Remove both trays from the oven. Plate the salmon alongside the crispy Brussels sprouts and serve immediately.
