Seared Salmon with Steamed Asparagus and Sweet Potato Mash
Enjoy a bright and flavorful dinner featuring medium-seared salmon paired with vibrant steamed asparagus and a creamy sweet potato mash enhanced with a dollop of tangy Greek yogurt. This balanced plate delivers a satisfying blend of rich protein, naturally sweet veggies, and a hint of citrus for freshness.
INGREDIENTS
5.5 oz salmon fillet (156g)
100g sweet potato
100g asparagus
1/4 cup nonfat Greek yogurt (60g)
1 tsp lemon juice
Salt and pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Preheat a skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes before flipping. Continue cooking until the salmon is cooked through, about 2-3 additional minutes, depending on thickness.
While the salmon is cooking, peel (if desired) and dice the sweet potato. Steam the sweet potato pieces until tender, about 10-12 minutes.
In a small bowl, mash the steamed sweet potato with the nonfat Greek yogurt and a teaspoon of lemon juice until smooth. Season with a pinch of salt if needed.
Trim the tough ends of the asparagus and steam them for about 4-5 minutes until crisp-tender.
Plate the seared salmon alongside a serving of sweet potato mash and steamed asparagus. Drizzle a little extra lemon juice over the salmon if desired, and serve immediately.
