INGREDIENTS
6 oz Chicken Breast
2 oz Whole Wheat Pasta (dry)
1 cup Fresh Basil Leaves
1 clove Garlic
1 tbsp Olive Oil
2 tbsp Parmesan Cheese
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Bring a pot of salted water to a boil, and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
While the pasta cooks, season the chicken breast with salt and pepper. Heat a skillet over medium-high heat with a drizzle of olive oil.
Sear the chicken breast for about 5-6 minutes on each side, or until fully cooked and golden on the outside. Once cooked, let it rest for a few minutes before slicing.
To make the fresh basil pesto, combine the basil leaves, garlic, olive oil, Parmesan cheese, and lemon juice in a food processor. Blend until smooth, adding a pinch of salt and pepper to taste.
Toss the cooked pasta with the pesto sauce until evenly coated. Arrange sliced chicken on top of the pasta.
Serve immediately, garnished with extra basil or Parmesan if desired.
