INGREDIENTS
1 medium Red Bell Pepper (119g)
4 ounces Lean Ground Turkey (113g)
1 ounce Crispy Turkey Pepperoni (28g)
1/4 cup Low-Fat Mozzarella Cheese, shredded (28g)
1/4 cup chopped Onion (40g)
1 tablespoon Tomato Paste (15g)
1 clove Garlic, minced
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 375°F.
Cut the top off the red bell pepper and remove the seeds and membranes. Set aside.
In a skillet over medium heat, add the lean ground turkey and chopped onion. Sauté until the turkey is cooked through and the onions are softened, about 5-7 minutes.
Add minced garlic and tomato paste to the skillet. Stir and cook for another 1-2 minutes until fragrant.
Season the mixture with salt and black pepper to taste.
Stir in the turkey pepperoni pieces and remove the skillet from heat.
Spoon the turkey mixture into the hollowed bell pepper. Top with shredded low-fat mozzarella cheese.
Place the stuffed bell pepper on a baking dish and bake in the preheated oven for 15-20 minutes, or until the pepper is tender and the cheese is melted and slightly golden.
Remove from the oven and allow to cool slightly before serving.
