INGREDIENTS
6 oz Ground Turkey
1 medium Sweet Potato
1 large Egg
1 medium Red Bell Pepper
1 small Yellow Onion
1 tsp Olive Oil
Pinch Salt
Pinch Black Pepper
1 tsp Paprika
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and thinly slice the small yellow onion.
In a non-stick skillet, heat the olive oil over medium heat. Sauté the onions and bell peppers for 3-4 minutes until they start to soften.
Add the diced sweet potato to the skillet and cook for about 5-7 minutes, stirring occasionally, until they begin to soften.
Push the vegetables to the side of the skillet and add the ground turkey. Break up the meat with a spatula and cook for about 5-6 minutes until it is browned and cooked through.
Mix the turkey with the vegetables and season the hash with salt, pepper, and paprika. Adjust spices as needed.
Create a small well in the center of the hash and crack the egg into the pan. Cover the skillet and cook until the egg white is set but the yolk remains runny, about 3-4 minutes, or cook longer for a fully set egg.
Once cooked to your liking, remove the skillet from heat, serve hot, and enjoy your hearty hash.
