150g Sweet Potato
2 tbsp BBQ Sauce

PREPARATION
Preheat your oven to 400°F (200°C).
Place the chicken thigh in a small baking dish. Season lightly with salt and pepper, then brush with 1 tablespoon of BBQ sauce.
Peel and cube the sweet potato into bite-sized pieces, toss with olive oil, salt, and pepper.
Spread the sweet potato cubes on a baking sheet in a single layer.
Place both the chicken and sweet potatoes in the preheated oven. Roast the sweet potatoes for about 25-30 minutes, stirring halfway through, until tender and caramelized.
Roast the chicken for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C). In the last 5 minutes of cooking, brush the chicken with the remaining BBQ sauce.
