1/4 cup Chickpeas (40g)
PREPARATION
Preheat your grill or grill pan over medium-high heat.
Slice the zucchini, red bell pepper, and eggplant into uniform pieces. Lightly coat with a brush of olive oil, salt, and pepper.
Grill the vegetables for 3-4 minutes per side until they show nice grill marks and are slightly softened.
