INGREDIENTS
6 oz Catfish Fillet (~170g)
1 cup Green Beans (~125g)
2 tsp Olive Oil (~10g)
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Onion Powder
0.5 tsp Cayenne Pepper
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F for roasting the green beans.
Rinse and pat dry the catfish fillet. In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Lightly brush the catfish with 1 teaspoon of olive oil and sprinkle the spice mix evenly on both sides, patting it in to form a crust.
Heat a non-stick skillet over medium-high heat. Once hot, add the catfish and cook for 3-4 minutes on each side until a crispy, blackened crust forms. Remove from heat.
While the catfish is cooking, toss the green beans in a bowl with the remaining olive oil, a pinch of salt, and pepper.
Spread the green beans on a baking sheet and roast in the preheated oven for about 12-15 minutes, or until tender and slightly crispy on the edges.
Plate the blackened catfish alongside the roasted green beans and serve immediately.
