INGREDIENTS
6 oz Chicken Breast (170g)
1 cup Green Beans (125g)
1.5 tbsp Olive Oil (21g)
Juice of 1 Lemon (44g)
1 clove Garlic (3g)
2 sprigs Fresh Thyme
2 sprigs Fresh Rosemary
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a bowl, combine the lemon juice, minced garlic, roughly chopped thyme and rosemary, salt, and pepper. Mix well to create a marinade.
Place the chicken breast in a resealable bag or shallow dish, pour half of the marinade over it, and let it marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
While the chicken marinates, toss the green beans with olive oil, the remaining marinade, and a pinch of salt and pepper on a lined baking sheet.
Arrange the marinated chicken breast on the baking sheet alongside the green beans.
Roast in the preheated oven for 20-25 minutes, until the chicken is cooked through (internal temperature of 165°F) and the green beans are crisp-tender and slightly browned.
Remove from the oven, let rest for a few minutes, then slice the chicken if desired and serve with the crispy green beans.
