INGREDIENTS
7 oz Cod Fillet (approx. 200g)
150g Potato (diced)
100g Broccoli (florets)
1 tbsp Olive Oil
2 tbsp Mixed Fresh Herbs
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Cut the potatoes into bite-sized cubes and toss them in 1/2 tablespoon olive oil, minced garlic, mixed herbs, salt, and pepper.
Spread the potatoes on a baking sheet and roast for 20-25 minutes until golden and crispy, stirring halfway through.
Meanwhile, season the cod fillet with salt, pepper, and a sprinkle of herbs.
Heat the remaining olive oil in a skillet over medium-high heat and add the seasoned cod. Sear for about 3-4 minutes on each side until the fish is cooked through and has a nice golden crust.
While the fish is cooking, steam the broccoli for around 5 minutes until tender yet still bright and crisp.
Plate the seared cod alongside the herb-roasted potatoes and steamed broccoli. Serve immediately and enjoy your balanced, tasty dinner.
