6 oz Mahi Mahi Fillet
1.5 cups Brussels Sprouts (approx. 150g)
1 tbsp Olive Oil
1 tbsp Lemon Juice
Salt, Pepper, Garlic Powder to taste
PREPARATION
Preheat your oven to 425°F.
Trim and halve the Brussels sprouts. Toss them in half of the olive oil, salt, and pepper.
Spread the Brussels sprouts on a baking sheet and roast in the oven for about 18-20 minutes until they are crispy on the edges and tender inside, stirring halfway through.
While the sprouts roast, pat the mahi mahi fillets dry and season both sides with salt, pepper, and a pinch of garlic powder.
Heat the remaining olive oil in a nonstick skillet over medium-high heat.
Once the oil is shimmering, add the mahi mahi fillet and sear for about 3-4 minutes per side until a golden crust forms and the fish is cooked through.
Remove the fish from the skillet and squeeze lemon juice over it.
Plate the seared mahi mahi alongside the roasted Brussels sprouts and serve immediately.
