6 oz Chicken Breast
8 spears Asparagus
1 medium Lemon
1 tbsp Olive Oil
1 clove Garlic
2 tbsp Fresh Parsley
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Trim the tough ends of the asparagus and place them on a baking sheet. Drizzle with half of the olive oil, season with salt and pepper, and set aside.
In a small bowl, mix the juice of the lemon, minced garlic, chopped fresh parsley, and a pinch of salt and pepper.
Heat the remaining olive oil in a skillet over medium-high heat. Season the chicken breast with salt and pepper on both sides.
Sear the chicken breast in the skillet for about 4-5 minutes on each side until golden brown.
While the chicken is searing, roast the asparagus in the preheated oven for about 10-12 minutes until tender and slightly crispy.
