INGREDIENTS
400g Extra-Firm Tofu
1 medium Red Bell Pepper
1 cup Broccoli
1/2 cup Snow Peas
1 medium Carrot
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Sesame Seeds
2 cloves Garlic
1 tsp Fresh Ginger
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
In a bowl, mix the tofu cubes with a drizzle of sesame oil and a pinch of salt. Let sit for 5 minutes.
Heat a non-stick skillet over medium-high heat and add the tofu cubes. Pan-fry until all sides are golden and crispy, about 6-8 minutes. Remove and set aside.
Chop the red bell pepper into strips, cut the broccoli into florets, slice the carrot into thin matchsticks, and prepare the snow peas by trimming the ends.
In the same skillet, add a little more sesame oil if needed. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
Add the red bell pepper, broccoli, snow peas, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Return the crispy tofu to the skillet and drizzle the low-sodium soy sauce over the ingredients. Toss gently to combine and heat through for another 1-2 minutes.
Plate the stir-fry and garnish with a sprinkle of sesame seeds. Serve immediately.
