Egg White and Turkey Sausage Scramble with Spinach and Roasted Sweet Potatoes
A savory breakfast scramble featuring fluffy egg whites, lean turkey sausage, fresh spinach and vibrant bell peppers paired with crispy roasted sweet potatoes and a sprinkling of tangy feta cheese for a balanced start to your day.
INGREDIENTS
4 large egg whites (120g)
2 turkey sausage links (70g)
1 cup raw spinach (30g)
1/2 medium sweet potato (75g)
1 tsp extra virgin olive oil (4.5g)
1 oz feta cheese (28g)
1/4 cup diced red bell pepper (30g)
PREPARATION
Preheat your oven to 400°F.
Peel and dice the sweet potato into cubes. Toss with olive oil, and season with a pinch of salt and pepper if desired. Spread evenly on a baking sheet and roast for 20-25 minutes until tender and lightly crisp.
While the sweet potatoes roast, heat a non-stick skillet over medium heat. Add the turkey sausage links and warm them up, then remove and slice into rounds.
In the same skillet, add the diced red bell pepper and spinach, sautéing just until the spinach wilts and the peppers are slightly softened.
Pour in the egg whites and gently scramble, stirring occasionally until the eggs are set but still moist.
Fold in the sliced turkey sausage, and remove the skillet from heat.
Plate the scramble alongside the roasted sweet potato cubes, and sprinkle crumbled feta cheese over the egg mixture.
Serve immediately while warm.
