INGREDIENTS
1 large onion (150g)
1 tablespoon extra virgin olive oil
6 ounces chicken breast, skinless
2 cups low-sodium chicken broth
1/4 cup nonfat Greek yogurt
2 garlic cloves
3 sprigs fresh thyme
1 bay leaf
Salt and pepper to taste
PREPARATION
Thinly slice the onion and mince the garlic.
In a large pot, heat the olive oil over medium-low heat. Add the onions and a pinch of salt to help them release their moisture, then cook slowly, stirring occasionally, for about 20-25 minutes until they are deeply caramelized and golden brown.
While the onions caramelize, season the chicken breast with salt and pepper and either grill or sear in a nonstick pan until fully cooked, then shred or chop into bite-sized pieces.
Add the minced garlic during the last 3-4 minutes of the onion caramelization.
Pour in the low-sodium chicken broth, add the bay leaf and thyme sprigs, and bring the mixture to a simmer. Let it cook for about 10 minutes to meld the flavors.
Remove the thyme sprigs and bay leaf. Stir in the chopped chicken breast.
Ladle the soup into bowls and top each serving with a dollop of nonfat Greek yogurt. Season with additional salt and pepper if desired, and serve warm.
