INGREDIENTS
5 oz Fresh Sardine Fillets
1 cup Asparagus
1 tbsp Olive Oil
1 Garlic Clove
1 tbsp Lemon Juice
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F for the asparagus.
Rinse the asparagus and trim the tough ends. Toss with half of the olive oil, a pinch of salt, and pepper.
Spread the asparagus evenly on a baking sheet and roast for 10-12 minutes until tender and slightly crisp.
While the asparagus is roasting, pat the sardine fillets dry with a paper towel and season lightly with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Add the sardine fillets, skin-side down if applicable, and sear for about 2-3 minutes until golden.
Flip the fillets and add the minced garlic to the pan. Sear for another 2 minutes while spooning some of the garlic-infused oil over the fish.
Remove the skillet from heat and drizzle lemon juice over the sardines.
Plate the sardines with a side of roasted asparagus and serve immediately.
