INGREDIENTS
7 oz Cod Fillet (198g)
1 cup Green Beans (125g)
1 tbsp Extra Virgin Olive Oil (14g)
1 clove Garlic (3g)
2 tbsp Lemon Juice (30g)
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) for roasting the green beans.
Toss the green beans in half of the olive oil, and season with a pinch of salt and black pepper. Spread them on a baking sheet and roast for 12-15 minutes until tender and slightly charred.
While the green beans are roasting, pat the cod fillet dry and season lightly with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat. Add the cod fillet and sear for about 3-4 minutes on each side until the fish is opaque and flakes easily with a fork.
In the same pan, add the minced garlic and sauté briefly for about 30 seconds until fragrant. Pour in the lemon juice and allow the sauce to simmer for another minute.
Plate the cod, drizzle with the tangy lemon-garlic sauce, and serve alongside the roasted green beans.
