PREPARATION
Prepare your vegetables by washing and slicing the tomato, red bell pepper, and cucumber into thin strips.
In a bowl, toss the roasted chickpeas (if not pre-roasted, season cooked chickpeas with your favorite spices and roast in the oven at 400°F for 20 minutes until crispy).
