INGREDIENTS
280g Extra-Firm Tofu
75g Shelled Edamame
1 cup Broccoli Florets
1 medium Red Bell Pepper
1 medium Carrot
1/2 medium Red Onion
1 tbsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Seeds
2 cloves Garlic
1 tsp Fresh Ginger
PREPARATION
Drain the tofu and press it for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with 1/2 tablespoon of soy sauce and a sprinkle of sesame seeds.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes and stir-fry until they become golden and crispy on all sides, about 6-8 minutes. Remove tofu from the skillet and set aside.
In the same skillet, add minced garlic, grated ginger, and the sliced red onion. Sauté for about 1-2 minutes until fragrant.
Add broccoli florets, sliced red bell pepper, and carrot slices. Stir-fry the vegetables for 3-4 minutes until they are crisp-tender.
Return the crispy tofu to the skillet, add the remaining soy sauce, and toss everything together to warm through. Stir in the shelled edamame.
Finish by sprinkling with additional sesame seeds for garnish and serve hot.
